"Tempo" is a phantom brand once brewed by the famous Toji Hiroyuki Kiyokawa, known for "Isojiman," and aged over many years.
Over time, the edges have been rounded off, creating a unique depth and umami described as "Amamokkuri" (sweet and mellow).
It is truly a precious old sake of a once-in-a-lifetime encounter, which will end as soon as the unpasteurized sake stored in tanks runs out.
