They use the spiritual water "Kukaisui," which is said to have sprung up when Kobo Daishi (Kukai) struck the ground with his staff, as brewing water. In a land colored by the rich nature and historical legends of Kishu, they continue to protect the tradition of handmade sake and brew simple and warm sake.
